COLORADO SPRINGS, CO — Mendocino Farms, the California sandwich-and-salad chain with three Denver restaurants already open, is bringing its first Colorado Springs restaurant to The Promenade Shops at Briargate, and the hiring has already started. The Gazette reports a target opening of Tuesday, Oct. 27, and the company's own careers site lists the Briargate store as now interviewing for every hospitality and production position.

Mendocino Farms Picks Briargate for Its First Springs Restaurant

This will be the chain's fourth Colorado restaurant and its first outside Denver, according to The Gazette, following locations in Cherry Creek, the Highlands and on Denver's 16th Street. Briargate is a natural landing spot. The Promenade sits on Briargate Parkway just east of I-25, surrounded by rooftops and the north-side office parks that keep lunch counters busy on weekdays.

The restaurant is part of a wider refresh at the center. Springs Magazine reports that American Eagle is expected to open before the end of the year, Kendra Scott is on the way, and Lululemon is expanding in the fourth quarter.
